‘Pensar con el paladar. Una estética gustatoria’ (Thinking with the palate. A gustatory aesthetic) is the latest book written by Gerard Vilar, coordinator of the University Master's Degree in Research in Art and Design (MURAD), and Jèssica Jacques, lecturer on this programme.

This publication, with a foreword by Ferran Adrià, proposes a cognitivist philosophical conception: thinking with the palate as a way of knowing, fitting the central pieces of recent cognitive sciences with critical theory in the broadest sense, as well as activism and its performative derivations.

‘Pensar con el paladar. Una estética gustatoria’, published by El espejo y la lámpara, also considers that gastronomic culture has a function of social and cultural critique that brings it closer to art through its creative capacity to generate spaces of difference and autonomy, and that gustatory aesthetics includes both an ethics and a politics of emancipation. In short, the world of cuisine has passed, in societies without hunger, from the realm of necessity to the realm of freedom.
